Another Refrigeration ?

Good morning, all! I am making a carrot cake for the basket of leaves. My question is if I make the cream cheese frosting shouldn't it be refrigerated? How can it be refrigerated if it has fondant for the basket?
Sorry for the stupid ?'s.

Hi there, I never put my cakes in the fridge, with or withought fondant on. But there are decorators who thier fondnant covered cakes in the fridge. You need to take it out from the fridge and let it thaw. You shouldn't touch it while its coming to room temperature. If you have an airconditioner, put it on when you take the cake out from the fridge. HTH icon_smile.gif
