Help Please!!! Crusting Cream Cheese Icing

I'm planning on making the crusting cream cheese icing found in the favorite recipes. It calls for 1 lb of cream cheese....how much would a lb be?

I thought of another question. How long will this icing keep? I'm using it on cupcakes today to test the icing and it seems like a lot.
My daughter's 1st birthday is on the 18th. Do you think it will keep in the fridge until then so I can use on her cake.

If the recipe you are using has the following ingredients it should keep in the refrigerator through the expiration date on the cream cheese.
