Hi all,

I happened upon this forum whilst googling cake recipes, so thought i'd join.
I'm making a 30th birthday cake for my girfriend.
I will be delivering it to the restaurant that a group of us are attending, so want it to be pretty special.

I am in the process of making a swarovski crystal cake topper spelling her name and '30' (had the letters cut out of silver acrylic and sticking crystals to them - they will be stood upright on top of the cake)

anyway, I bought a square 10"x12" cake tin today.

I'm after a sponge recipe to make a sandwhich cake.
I need the sponge to be not too fluffy, and cetainly not dry.

I was thinking a sandwhich to make the cake more interesting, and having some kind of strawberry /buttercream spread between the two layers.

I then want to 'frost/ice' the cake with butter icing (baby pink)

so I guess i'm looking for advice on a good sponge recipe, a good butercream/butter-icing and any tips for baking it well!

apologies for the long description.
thanks in advance,
Matt (London, UK)

Hi Matt and welcome to cc. Can't help you with a sponge cake recipe because I don't get any requests for that type of cake here across the pond. As far as buttercream recipes go, there are a lot in the recipe section here. I use Indydebi's and also the crusting BC recipes, both from cc. But just check out the recipe section, there are a lot of good ones and good luck.
