i have a pina colada cake and have my first request for it but i don't know what to use for the filling? it's gonna be voered in fondant so no refigerting. help!

You could do a coconut filling or coconut cream cheese filling. Or you could always go all out and do a rum flavored buttercream.

it's for a kid's party. i was thinking cream cheese. not sure. the girl likes pineaplle but i think pineapple bc would take away from the coconut flavors

ok so i just made a practice one and did pina colada flavored bc but the customer said she thought pineapple chunks would be good in it. can i just mix them in the bc? it is also going to be covered in fondant so no fridgerating.

I would chop them up a bit or just get a can of crushed pineapple. I mix in fresh or canned fruit with my bc, even cream cheese and it is always yummy and doesn't need to be refrig. I use the decorators cream cheese recipe from this site.
