So last night I decided to make cupcakes for a birthday at work. Vanilla cupcakes with chocolate icing. I decided to use Wiltons Chocolate Fudge Icing recipe (below). I melted the butter in the pan and as I started adding the cocoa the entire thing turned into a giant lump. There was no way it was going to come out smooth or even boil for that matter.

Did I do something wrong or is the recipe messed up? seems like a lot of cocoa to mix into that amount of butter but I'm really really new at this!

Wilton's Chocolate Fudge Icing:

Ingredients:
2/3 cup butter or margarine
1 1/3 cup cocoa
6 cups confectioners' sugar
2/3 cup milk
2 teaspoons vanilla extract

icon_lol.gif I just had to say you have quite a way to describe things! I am not familiar with any Wilton recipes, but you may have wanted to whisk in the cocoa gradually. It sounds like you dumped in all at once and thats not a good idea. If you did it how like I suggested, then I don't know what went wrong.

I'd also send the cocoa powder through a sifter first (or even just have in sifter and do it directly in to pan whisking constantly)
