Newbie Has A Few Questions

Hi

I know that I have seen the answers to these but can't find them.
So here they are

!. when making mmf I can only find the 10.5 oz bag would I just add 2 more cups to make the 10 oz. I do not have a scale.

2. Where can I find the directions to make duff roses. I can make buttercream and royal Icing ones but would really love to be able to make gumpaste or fondant.

3. Can I substitute water for milk in Toba's glace I don't feel comfortable leaving decorated packaged cookies out of fridge with milk in the glace .

And for making fondant, ihighly recommend Michele Foster's Fodant. You can find it under Recipe Index. And for gumpaste, lot of members like to make Nicholas Lodge's gumpaste. It is on his web site.

1.I think you need to add 2 1/2 cups of marshmallows to make the 16 oz. I would weigh and measure the 5 1/2 oz marshmallows for you to know for sure, but I only have the big marshmallows b/c my walmart was clearing them so I stocked up.

3.I've never made Toba's glace...I always put MMF on my cookies. But milk in icings doesn't spoil...you probably put milk in your buttercream and then don't put your fondant-covered cakes in the fridge, and the buttercream does fine, right?
