what do i have to do to carve a crown out of a sheetcake .do i have to freeze cake before and do i put a crumb coat

first create template the size you need
freezing will make it more stable as you carve, but is not really necessary if you have a nice dense cake and a really sharp knife.
yes, should crumb coat to seal the crumbs and keep them out of the final icing.
