has anyone ever made buttercream icing with pudding in it? I am thinking of using instant pudding mix in my bc icing and would like to hear what ever one thinks of this idea plus if you have a recipe I would really appreciate it.

Thanks Sue

Yes, I absolutely have! I do dissolve the pudding in a bit of cream or creamer first, though, to avoid the grainy texture, but I regularly add instant pudding to my buttercreams .... yum!

Do you have to refrigerate the cake?

Uou do need to refrigerate depending on the liquid you use. If you use milk or cream, then you have straight-up pudding, so yes. However, if you're just dissolving it in water (not looking for that pudding consistency but rather just wanting to get the taste and get rid of the grainy texture), then you're fine without refrigeration.
