Making Cake Three Days Ahead

I have a cake order for a tiered cake, but I will be out of town the week they want to pick up the cake. My question is:

1. the cake will be covered in fondant, if I bake and decorate on Sunday will it still be fresh enough for party on that wednesday?

2. Can you put a fondant covered cake in the fridge?

I dont want to turn down the order, but with me leaving on monday i have never done one so many days in advance. This may be done all the time, but not sure.

1) if you have a good recipe, yes it should last.

2) why do you need to refridgerate? im not a fan personally (you can get problems with condensation), unless it has some sort of filling that needs refridgeration - and then you would need to make sure the customer has enough space, in a fridge without smelly foods incase it absorbed the flavour.
