Does MMF REALLY need to rest overnight before you can use it? What will happen if I use it as soon as it cools?
Thanks.

It's just softer and stretchier, and sometimes it will have little air bubbles, not between it and the cake but in the MMF itself.

I let mine rest for about an hour before working with it. Haven't had any major issues (yet). Did notice a few air bubbles last time but I attributed that to over-kneading when mixing in color.
