Is there any difference between Silpat and the less expensive silicone mats? I plan to buy one soon. Any advice will be welcome.

The best mat that I've ever used is a piece of thick clear vinyl from the fabric store. Nothing sticks to it, not even fondant that will stick to my silicone mats sometimes. It's cheap too, about $3 for a yard which makes two good-sized mats. You can't fold them to store them though, have to roll them up.

Clear vinyl! I would never have thought of that. Thanks for the tip. But what about hot stuff like poured sugar or sugar veil?
