I have some cakes coming today that will be frozen. Since I have to go out of town for next week and the cake is to be delivered on Saturday the 11th, I was wondering if I can thaw them when she drops them off, then ice them in BC, then refreeze? When I come back I need to put fondant over them so am not too worried about the appearance of the bc!
If this should be fine, what is the wrapping process for such cakes? Do I let the bc crust well, then double wrap in saran, then foil, then freeze?? Completely thaw before unwrapping right??
