Freezing, Re-Freezing With Icing??

I have some cakes coming today that will be frozen. Since I have to go out of town for next week and the cake is to be delivered on Saturday the 11th, I was wondering if I can thaw them when she drops them off, then ice them in BC, then refreeze? When I come back I need to put fondant over them so am not too worried about the appearance of the bc! icon_smile.gif

If this should be fine, what is the wrapping process for such cakes? Do I let the bc crust well, then double wrap in saran, then foil, then freeze?? Completely thaw before unwrapping right??
