Making Cakes In Advance?

I decorate cakes for family and friends only. I'm not anywhere near a professional and this is the first time I need to have three cakes ready for the same day. They are all buttercream. I plan to bake the cakes ahead of time and freeze them. But how far in advance can I decorate them? Can I decorate two on thursday and one on friday if they are needed for Saturday? Would I just cover them and refridgerate? How do I accomplish this? Thankyou for you responses.

I would freeze them about a week in advance.....then decor. them 1-2 days before they are due, and then immediately refridgerate them!

You can bake ahead (1 month if you want), just wrap in plastic, then aluminum foil, then food safe plastic bag it to keep odors out! As for decorating ahead, 1-2 days will be fine w/ buttercream & shouldn't need refrigeration.

I habitually ice/deocrate cakes on Thursday and/or Friday for my Saturday weddings. They sit on the counter until delivery.
