Okay so I opened my big mouth and said I'd make a strawberry cake with champagne icing....only to hop on here and not find any recipes. So if ANYONE!!! has a clue please let me know. p.s. I have only 4 hours left

Here is a recipe for a buttercream that uses champagne flavoring. You can probably add more of the flavoring until you get the taste you are looking for.

can you sub real champagne? I'm in tokyo, so i don't think I can find champagne flavor in the 3.5 hours I have left

i've never made champagne buttercream, but i assume that you can use real champagne. i would probably try reducing it in order to concentrate the flavor before adding it to the buttercream.

Simmer the champagne over low heat until the quantity reduces to at least 1/2 of the original amount. Stir often. You will see (& smell) steam coming off. Takes about 20 min.
