I have had a KA 6 qt and I recently opened a new shop....I filled my KA 17 times last week. SO I bought a 20 qt Com Mixer.
I use the WASC recipe and it fills my KA perfectly....can I just double or triple it without getting a bad consistancy. I get it tomorrow and I am excited to try it out...but not at the expence of my customers!! I still want a great cake!! Any help would be fabulous!

I personally don't see why it would make a difference.

Good luck with your new mixer.

I can only say that with scratch recipes there is a bit of a formula to scaling up a recipe. It's explained well inthe Cake Bible. For mixes or enhanced mixes, I haven't a clue, but suspect they'd be fine scaled up.
