Hello,

Im making a cake for this weekend and the filing is cream cheese.
But, I would like to now for how long this kind cake can be without refrigeration?
The party is out side ...open air. Temperature around 85.
The size the cake is 10x4.

I forgot one more thing.......the cake decoration is fondant.

There are bound to be those who disagree, but I've never had a problem with leaving dairy out for a day or so. The cream cheese will be stabilized with the sugar and protected from direct air because it's a filling. I mean, I wouldn't leave it for a week, but a day? Yep. Just my opinion. 85 is warm. I personally wouldn't trust cream cheese out for too long. Thats just me though.

I've let a cake for 24 hours inside the house with the AC at 68 with no problems.
