Good Filling For Lemon Cake?

I really want to make a lemon cakes for my doctor's birthday this week and really just don't know what else I should use as a filling, because I love lemon cake just out of the oven with a cold cup of milk. icon_biggrin.gif I know weird huh, but for them I want something good. Any lemon cake combinations that are a hit for you guys please share. Thanks a million and one!

I use either Lemon Curd (you can find it in the jelly/jam aisle) or make lemon buttercream.

Raspberry filling ( recipe here on CC) or use seedless raspberry jam, lemon curd, lemon BC, passion fruit jam....... I'm sure there are tons more, these are just my personal favorites. icon_smile.gif

I've used strawberry filling (fresh berries cooked with sugar/water/vanilla/thickener) and have also used lemon pudding mixed with an equal amount of buttercream as a filling for lemon cake. It softens the lemon-ness (if that's a word) of the pudding and compliments lemon cake well.

It's the perfect season for lemon cake. Hope your doctor likes it!

Thanks for the replies, but I guess I should have mentioned one of them is allergic to berries (all). I thought of strawberries too. Sorry again. But curd sounds good. Any other suggestions?

I just made lemon cupcakes this weekend. I made lemon curd from the sky high book and frosted them with lemon buttercream. They were really yummy.

I personally love chocolate with lemon.
I think a nice whipped dark chocolate ganache would be very tasty.

Other than that I wouldn't know what to use other than berry filling of some sort.

Several people have already named the combo's I like. Lemon with raspberry filling or lemon with lemon curd.

What did you decide on?

I think I'm going to do a lemon curd but I'll add a half of heavy cream to make a whipped lemon filling. Thanks to all for your suggestions.

My family loves when I use my lemon filling for my lemon meringue pies in lemon cake. But it is very lemony..

One of the most popular cakes I made for a tea house here in our town was a lemon cake. It was soooo easy - bake a lemon cake, take a can of lemon pie filling - use 1/3 of that can to fill the cake. Use the other 2/3 to mix with an 8 ounce tub of cool whip - mix it really good (it will look like it has curdled at first) then use that as the icing! Very refrshing cake and they would buy several of them every week!

Blueberry is also a good compliment to lemon, but I don't know if they woud be included in the forbidden "berries". Orange is also good...maybe a marmalade-type filling?

this may sound weird but last week I ate a ginger cookie with lemon filling at costco. It was so yummy. Do you thing a ginger flavored buttercream would be good?

I already have a sever craving for cinnamon bc right now so maybe I'm just in a spicy mood. icon_biggrin.gif

Here is my Lemon filling recipe.. I HATE canned lemon filling (it tastes Canny to me)
I have won best Lemon meringue pie 3 times with this one at the county fair.


JaimeAnn's Lemon filling

1 & 1/2 cups sugar
1/3 cup plus 1 Tablespoon cornstarch
1 & 1/2 cups water
3 egg yolks slightly beaten
3 Tablespoons butter
2 - 3 teaspoons lemon rind (grated)
3/4 cup fresh lemon juice

Mix sugar and cornstarch in med saucepan, gradually stir in water.
Cook over med heat, stirring constantly till mixture comes to a full boil.
Boil and stir 1-2 minutes. Gradually stir at least half of hot mixture
into egg yolks. Blend it back into to pan and remaining hot mixture. Boil and stir 2-3 minutes longer, if you don't your filling will taste eggy. Remove from heat add butter, lemon rind, & lemon juice. Either use as pie filling or refrigerate and use to fill pastries or cakes.

Oh I forgot sometimes I layer it with a light cream cheese filling in my pies for Lemon Supreme Pie.

I bet it would be good layered in lemon cake too.


Supreme Cream Cheese Filling

12 ounces cream cheese, softened
3/4 cup confectioners' sugar
1 1/2 cups whipped topping or whipped cream
2 tablespoons fresh lemon juice

In a mixing bowl, beat cream cheese and sugar until smooth. Fold in whipped topping and lemon juice. Refrigerate.

How about a lemon butter cookie layer??? Oh gosh, like Lemon Coolers(do they even make those anymore??? I could eat my weight in those!) Lemon cake, lemon buttercream with lemon butter cookie either whole or crushed up in the buttercream or bettercreme....oh yum!

I make a filling with mascarpone cheese, comes in a tub about 8oz I think with 3 tbsp or so of powdered sugar, add zest of lemon whisk it all together, then I put a thin layer of lemon curd on the sponge first - divine!
