Hi, I need your help.

I have to make a wedding cake in August and the bride has changed her mind AGAIN!!! I have no problem with the changes but I don't know if what she wants is possible..She wants 3-4 tiers no problem...but she has found out she has celiacs disease and needs to have a gluten free cake..again no problem...But she wants the top layer to be gluten free (cake and icing ..can you make gluten free icing) and the other layers made out of regular cake and icing. Can this be done and how would I do it or am I better off making the whole cake gluten free.

Thanks..

Depending on how sensitive her guests are to gluten, I would recommend having the GF cake separate from the regular stacked cake. As far as GF frosting goes, gluten is found in flour, so as long as you use any recipe not calling for wheat products you're fine. Also, make sure your vanilla is GF too...
