Help - Bettercreme Filling For Margarita Cupcakes

Hi,

I am making MacsMom's Margarita Cake (in cupcakes) and I need some ideas for the filling/frosting. I am planning to use Bettercreme and have thought about:

Lemon pudding - with or without cream cheese
Lemon curd - already done or I would make lime
Fresh lime juice (too sour??) and/or zest
Apricot sleeve filling - just because I have it left over in the fridge
Orange liqueur

I'm only doing half of MM's recipe, so I will also have some full strength (frozen) margarita mix left over that I can use.

This is for work - no biggie - but I've only used Bettercreme twice before so I'm trying to get it figured out. Thanks so much for any and all suggestions.

Martha, I have not tried the margarita recipe that you are trying but I have one of my own. What I have found is that the cake has such a delicate flavor that I normally either sprinkle them with powdered sugar or use just a sweetened whipped cream topping which you could also use as a filling. Then just put a sugared lime twist or a piece of one of those lime candies that look like a segment of lime and a bit of zest on top.

Thanks, BeeBoos. I haven't tasted the cupcakes, so maybe I need to do that first. I needed an excuse to eat one anyway! icon_smile.gif
