I saw this idea on here and thought I had saved it in my watched topics but now I can't find it. I am planning to do this on a cake for this weekend but just wanted to double check that all I have to do is put the cookie between the two layers. I'll be torting and filling each layer but I wanted to try the cookie between the two. Does anyone know where to find this topic?

I do this all of the time. What I do: bake a big cookie in the same size pan as your cake. Under bake by just a few minutes. You still want it done just not crunchy. Then your layers should be: cake, icing, cookie, icing and cake. Let is sit for a couple or hours before cutting so that the cookie can absorb some of the moisture from the icing and become softer. You do want a different texture in your cake but not something hard. HTH
