I have a cake that I am supposed to do for Monday, May 25th, however, I am leaving for a band on Friday, May 22nd around 3pm.

I was thinking of baking the cake on Thursday evening and crumb coating it. Friday I was going to ice, not sure if I should use buttercream and add fondant accents or use fondant for everything?

Please advise as to what I should do...

Thanks!

it should be fine to do it that way. My sister in law actually waited a week to eat her cake that I made her (the beer bucket in my pics). I don't advise that but she said it was great. She refused to cut it so she could take it to PA to show her daughters. So I think it will be fine. If it has perishable fillings....refrigerate it.
