I'm about to go up to the church and use their professional convection oven for the first time to bake 200 cupcakes. How does baking time and temp differ in a convection oven? I don't want to burn them! It's one of the free-standing footed ones, not a countertop model.

Any help greatly appreciated! THX!

I only ave experience with my convection oven at home. Its a viking so they told me its comparable but who knows. Anyway, take the temp down by 25 degrees and decrease the cooking time by 5-10 minutes. Hope this helps! Also my oven seems to be more sensitive to preheating that a regular oven. It needs 20-30 minutes for baked goods and then it works better than any other oven I've used.
