I need to buy some more Satin Ice fondant for a cake and I'd like to buy much more than I need so I have it on hand. Once the pail is opend, how long will it keep? Does it have to be refidgerated once it is opened? It's just so nice to have it on hand but I don't want it to go bad before I can use it! Any help from you experienced bakers would be much appreciated! Thank you,
Jackie

I've done this several times....bought 2 or 3 50lb buckets when they had free shipping or some other great deal, and kept it in my shop. I've never had it go bad. Keep it covered in plastic and the lid on firmly. It will be fine for a good, long, time.
