Shortening Instead Of Part Of Butter?

I believe I read you can replace some of the butter in a cookie recipe with shortening? What is the reason for doing this?

less spreading? am not sure... and it also makes a soft cookie i guess

I know an owner of one of the bakeries I worked for used to have us use some shortening in the cookies b/c it was cheaper than butter icon_sad.gif
