Can I use MMF to cover the cake the way I would use fondant? If not, can someone share a rolled buttercream recipe that doesn't need cream? My son is allergc to dairy.

Yes, I use MMF exclusively for all my fondant work and cake covering. I love Macsmom's recipe found here in the recipe section, it's easy to make, easy to work with and as far as fondant goes it tastes good.
