I just borrowed two cake books by Roland Mesnier, who was the White House executive pastry chef for 25 years. I'd never heard of him before my neighbor handed me the books after finding out that I'm doing cakes now.

The books are called "Basic To Beautiful Cakes" and "Dessert University."

Have any of you heard of this guy? Do you have any favorite recipes?

I have not heard of him; but if he was good enough for the white house with all the special entertaining they do; then he must have good recipes. For me, when I look at a recipe, I look at the ingredients and see if they are things I like and if they are things that are easily obtainable. If both, then I'll try it.
