Cake Freshness

If I bake and decorate a cake on Sunday and leave it in the fridge will it be fresh still on Thursday?

My daughter is so upset, she wanted me to make a cake and I will be out of town when she needs it. I am just a hobby baker, so I really was not sure about freshness since cake never last that long in my house.

i wouldnt put it in the fridge - unless the filling really needs it, then id say get a different filling - cause that will most likely make it go staler (same as bread). as long as its been properly iced (no gaps in bc, or 'sealed' with fondant) and stored properly, u will be fine.

Hi!
It depends on the filling and if you are covering it with buttercream or fondant. Fondant seals in the freshness longer.
The other thing is I dont't recomend puting a complete decorated cake in the fridge, condensation will ruin the decorations.

It will be covered in buttercream, a few fondant accents. The filling will be buttercream also. I thought the fridge might keep it fresher.

So ... If I ice it good, no gaps, have it boxed - I should be good ?
