I've been asked to make a lemon cake. So, I am trying a receipe from CC. I'm wondering, though, about what kind of icing to use. I think that I will torte the two layers of cake and put lemon curd between two of the layers and a raspberry filling between layers.
So, what kind of icing sounds good? I'm sort of leaning toward a whipped topping to keep it light. Any suggestion?
TIA
I frost mine with SMBC....light, sophisticated and goes perfect with lemon and raspberry!
I vote for IMBC or SMBC as Eme mentioned. It's an elegant complement to a lemon cake, much lighter than a powdered sugar buttercream, and all natural flavors to go along with the fresh tastes in the cake.
I just made lemon cake with raspberry cream cheese BC. YUM! I love raspberry and lemon together.
I made a lemon cake last night and made the filling of 1/2 buttercream 1/2 lemon curd. It took away some of the tartness of the curd and was absolutely yummy!!
rmbias1... i think , what you said you were thinking about doing... sounds really delicious...hth
