Carrot Cake From A Box

I was wondering if you could make a good carrot cake using a spice cake mix. Can you just add the carrots, raisins and maybe pineapple to the cake mix and have it turn out right? Thanks

You sure can, but I dont start with a spice mix, icon_biggrin.gif.

I start with a French Vanilla mix, add the cake extender to it. Add 1 cup, per mix that you use, of shredded carrots. I also add 2 tsp freshly ground cinnamon, 1/4 tsp. ground ginger, 1/2 tsp freshly ground nutmeg, and 1/4 tsp freshly ground cloves. Substitute your water for half and half or butter milk. Fold in your nuts and or raisens at the end.

I dont do pineapple in my carrot cake *shudders*. Its perfectlt moist without the pineapple. When I frost it, I use a cream cheese icing, making dips and swirls on the top with the back of a spoon. The sides I cover with icing and then a thick layer of chopped toasted walnuts. Unless of course I am covering it with fondant.

I have been told its the best icon_smile.gif.
