I'm looking for some advice/guidance. I've been asked to make a Red Drum fish cake. I'd like to try a practice run before I say "yes". I've got plenty of time since its not until May. Does anyone have any instructions or a tutorial for a fish cake? The detail towards the front of the fish looks intimidating. Thanks for any input.

Sorry don't know what a Red Drum fish looks like. What about a FBCT? Or are you going to carve it?

Need to carve it. Not sure how to get the features on the face of the fish and need to shade the coloration of it. Going to make a fish this week for my husband's birthday to see my starting point.

Carving a fish is easy.

here is a link to from my class with bronwen weber from two years ago. You can see how she carved a fish and colored it. If you do not have an airbrush you can paint the fondant.
