Every January I go through my invoices to see how much product we go through in one year. It always amazes me when I see the totals. It doesn't seem that much when you think one week at a time!
2008:
21,100 pounds of cake mix
27,970 pounds of powdered sugar
6372 pounds of butter
9500 pounds of shortening
1036 pounds of sour cream
270 gallons of oil

Another interesting tidbit...the cost of goods was only 15% of my expenditures.

Wow! I'd be interested to know how that breaks down (like, how many wedding cakes, party cakes etc all those ingredients are baked into.)

We do over 500 weddings a year.

Each week we do around 50-70 party cakes and 60-80 cakes sold each week in walk-in business.
