Favorite Smbc Recipe

I would like to try smbc because I am tiring of the super sweet and grainy taste of crusting buttercream. What is the best recipe? Do you have to use a thermometer to prepare the egg whites and sugar before whipping? How hard is it to smooth (love the viva method and I know it cant be used so im nervous) Any advice and a great recipe wouldbe so greatly appreciated. Thanks
