I need a good recipe for lemon cake that would work for a 4 tier fondant covered wedding cake. I would love a suggestion.

I made the following recently and it was a huge hit:

box of Betty Crocker lemon cake mix
eggs and water as called for on box
double the oil called for on box
zest of one lemon and one lime
box of lemon instant pudding mix (4 serving size & not sugar free)
