Fondant Over Ganache??

I have a customer who wants a chocolate cake w/ ganache and then covered in MMF.
I've never don't that before, I've always used BC under my fondant.

Any thoughts on this?

hi, you can do it without any problem. You need to make the ganache and get it to a spreadable consistancy. Then smoth it out as much as possible. Then leave it set completely. Maybe overnight. Then use clear alcohol to damp the ganache surface and then cover it with fondant.

hi! i had a problem with ganache and fondant, i ddnt totally covered it with fondant, i just used it to design it but all my fondant fell to the sides and melted. Maybe i just missed the alcohol thing, that bashini just mentioned.
the alcohol thing is new to me too. =)
