first off how do I make MOIST cupcakes? I cant seem to get them that moist... I don't know what im doing wrong...

ALSO I seen someone do white cupcakes but were colored BRIGHT rainbow colors when you bite into them. How would I achieve this look?? I need help guys these are due tomorrow!!!!
