Woo!! I am lucky #3 in the Cake Central Cupcake Club! Itâs an honor to lead the masses into the murky waters of an unknown recipe, and I hope we have some serious success stories to report after this! Now⦠it wouldnât be me if I werenât mixing it up a bit, (No pun intended!) (Oh, none taken!) so I am going to submit something a little different. I have not even had the chance to try this recipe, so I am in no way endorsing it. I want to make that clear! If itâs nasty you canât blame me!! But seriously, it just sounds good! So, without further ado, letâs take a departure from the sweet, Iâd like to tryâ¦

Tomato, Basil, & Mozzarella Muffins!

2 T. chopped fresh basil
2 ¾ c. AP flour
2 T. baking powder
½ t. salt
4 lightly beaten eggs
½ cup olive oil
10 ¾ oz. can condensed tomato soup
3 T. sundried tomatoes
½ c. shredded mozzarella

Preheat the oven to 350 degrees.

In a medium bowl mix the dry ingredients and set aside. (Chop your basil gently, don't manhandle it!)

In your mixer, combine eggs, olive oil, soup, and sundried tomatoes until well combined. Gently add in flour mixture until just combined. (Do NOT overmix!! It will be lumpy.)

Spoon into greased muffin pan and bake for 20 minutes or until done. Cool for five minutes, then remove muffins from pan. Serve warm.

Yield: 12 muffins

Now I can already tell you... I will certainly try the recipe as it lies, so to speak, but it is so obviously missing garlic in my mind. So, I will make them twice, and the second time include garlic. I mean, what are italian flavors without garlic? Am I right?! icon_rolleyes.gif

Since it worked so well to do the number between 1 and 1000, I think we should absolutely carry on with that. I will do the same thing. I have PM'ed my number to our previous hostess, and she will keep me 'honest' as it were. And no bribing her for hints either!! You naughty, naughty little cuppy addicts! Closest one to my number gets to be #4! Good luck, and let's hear all about your muffins. Oh, cheeky! icon_redface.gif

Edited to add date information: I will inform the next person on the 17th, (10 days) and they will start their new thread as soon as they are ready!!

Oh Mel,

These sound wonderful and I think I'm going to brush some of mine with butter garlic mixture. I too like the garlic. icon_biggrin.gif

SweetDreamsAT Posted 8 Sep 2008 , 1:47pm

oh YUM! What an obvious combo of flavors, but I would never have thought of it in a muffin!! And ditto on the garlic! I'm delivering a lasagna dinner this week to a friend who just had a baby, and instead of garlic bread I think I'll make these to go with it. Can't wait to try these!

Melody25 Posted 8 Sep 2008 , 1:56pm

MMMMMMMMMMMMMM These sound like the Tomato basil bagels I get from a local bagel shop. They are TO DIE FOR!!!!!!! I make mini pizzas out of them for the kids...Sprinkle with Mozz cheese broil for a few minutes...whoo-la. All I need is the basil... Hmmmmm

GrandmaG Posted 8 Sep 2008 , 1:57pm

Good choice Mel! And MeeMaw, the garlic butter sounds great! You could still make the original recipe and brush them with melted garlic butter before serving!
I still want to try the Lemon cc's. Just waiting for those darn lemons to come down in price! icon_sad.gif I could use the concentrated juice. ( I can get that now) but the zest of 6 lemons would cost me about $8.00! Crazy!!

frstech Posted 8 Sep 2008 , 2:05pm

The funny thing is, I HATE tomatoes, but love tomato basil soup, so I will definately give these a try!! icon_biggrin.gif Thanks for the twist Mel

Michelle104 Posted 8 Sep 2008 , 2:59pm

Oh, that's what I'm talking about!! I intend to do it like they do with the Cheddar Bay Biscuits at Red Lobster!!! OH YAH!!! WOOOOOO!!!

Mel -

Thanks for sharing this recipe with us. I was hoping that we could do savory cupcakes as well as sweet on here.

So for this recipe, we are to assume that the cheese is considered a dry ingredient. I am wondering if the cheese and sun-dried tomatoes should be tossed in some of the flour before adding, to prevent sinking.

I agree with the garlic, but if you're going to go that far, why not take it all the way?

Sprinkle the tops with grated parmesean, fresh minced garlic, and a tiny pinch of oregano before baking. Then brush them with the garlic butter when done. I have some leftover sweet Italian sausage that I might also toss in.

I'm wondering if some slightly reconstituted tomato paste or pizza sauce could be used in place of the tomato soup?

Tune in Tomorrow -

Melvira Posted 8 Sep 2008 , 5:23pm

Ok Theresa, now you're talking!!! That's a muffin I make that I call pizza muffins!! I use pizza sauce (where you'd have the soup in this recipe) cooked crumbled sausage or pepperoni, (or both, let's be honest!) cheese, garlic, basil, oregano, parsley, etc, etc. They are SO good!! But I want to try this recipe too as a more scaled down version!! It's a different taste than the pizza, but I think this should be good too!

Meemawfish Posted 8 Sep 2008 , 8:06pm

Wow ya'll are making me foam at the mouth. I like the sound of grated cheese on top also. Hey Mel do you know how many cuppies these will make? icon_lol.gificon_lol.gif

playingwithsugar Posted 8 Sep 2008 , 8:56pm

Nevermind that, Mel, you try this one, I want to try yours! icon_lol.gif

Please? thumbs_up.gif

Yum! I have to see how much sun dried tomatoes are. (textbooks aren't the cheapest things in the world, or the lightest...or the most fun) But I super want to try these muffins

Thanks Mel!

fiddlesticks Posted 8 Sep 2008 , 10:47pm

I buy them in the produce dept for under $2.00

Michelle104 Posted 8 Sep 2008 , 10:54pm

I just bought some today and they were in the produce at walmart and I think I paid 2.47 for them. Gettin ready to make em right now!!! MMMMMM!

GrandmaG Posted 8 Sep 2008 , 10:58pm

I just paid $2.07 for 3.5oz of sundried tomatoes at Walmart. I estimated that 3 Tablespoons would be about 1/3 of the package.

fiddlesticks Posted 8 Sep 2008 , 10:59pm

Im baking mine right now !

GrandmaG Posted 8 Sep 2008 , 11:06pm

I have to wait until tomorrow. I'm making chili tonight and you got to have cinnamon rolls with chili! I think it might be a Nebraska thing but they go great together!

stsapph Posted 8 Sep 2008 , 11:11pm

So have to try this recipe! I think the people at work will love it, and its something different from my normal sweet stuff. Great call Mel!

fiddlesticks Posted 8 Sep 2008 , 11:39pm

Ok fellow club members !
Im posting my link to the latest choice ,the Muffins.
http://imgsrc.cakecentral.com/modules.php?name=gallery&file=displayimage&pid=1263555&done=1
I ended up with 15 muffins and only had to bake them for about 16 mins.
They rose beautiful! They are very moist and I think they look beautiful to.
Im not to sure about the flavor ?
By looking at them I would think they would be just delicious !
I think they are missing something for sure ,but NOT sure what it is. I think the sausage that someone talked about would be great in these.
I think for me they had a little to much basil.
My husband who loves this type of flavor, doesent care for them at all ( Im so sad ) !
I did follow the recipe as is ! I think I will rate these about a 3 ?
I think with a few additions they could be very tasty !Just have to figure out what would be best to add to them ! I am glad I tried them !

Meemawfish Posted 8 Sep 2008 , 11:52pm

Fiddle they look so yummy. Did you try the butter garlic mixture on them? icon_biggrin.gif

fiddlesticks Posted 9 Sep 2008 , 12:05am

No I did not ! I always give a new recipe a try just the way it is. After that I make it mine ,so to speak !
These may be perfect just the way they are for lots of people but Just not for me ! Like I said I think they look beautiful, and are very moist theres nothing at all wrong with them.
I just think the need more flavor for my taste !
Oh and thanks for the comment !
Yes they do look cheesey,it must be the tomato soup in them because I didnt really taste the cheese .

sayhellojana Posted 9 Sep 2008 , 12:31am

Oh, $2 is no problem. I was thinking they were going to be more for some reason. Silly me.
Fiddle, they are a really nice color. I'm going to try these later this week. With some homemade pasta. I'm excited icon_smile.gif
