am from the Caribbean (st. lucia to be exact) and its very difficult to come across Almond product (flour, meal) for marziapan. Is there any substitute that can to used intead.
You can use Almond paste, but if you can't get almond flour or almond meal you may not be able to get almond paste either. You can order Almond Paste on-line at pastrychef.com. It's pretty expensive and comes in 7# cans, so unless you use a lot of marzipan it might not be worth the investment.
I think you can take skinned, blanched almonds and grind them up to make your own almond meal. It is cheaper too.
