If I use a cream cheese filling for a wedding cake, how long can it be left out of the fridge?

It would all depend on the room temperature and how cold the cake was before setting it out -- I know other area bakeries don't provide cream cheese icings in the summer months.

However, my inspector told me dairy-type fillings could be set out for 4 hours under normal conditions.

Hope that helps a little. icon_smile.gif

Thank you. The wedding is in May in Indiana. I don't think it will be too hot but I might tell the bride no just to be safe. Anyone else have thoughts?
