Does anyone have a yummy caramel filling recipe that they're willing to share? Something Mousse-y maybe to use as a filling? Thanks in advance.

Misdawn posted this one in a question I asked the other day about fillings

The filling that all my family and friends like the best is:
one 8 oz container caramel ice cream topping
1 to 2 cups powdered sugar (depending on taste and thickness)
1 8oz. package cream cheese

Mix and refrgierate for at least one hour before applying to cake. Must remain refrigerated.

I made this after misdawn posted it and it is marvelous!!

I used this for a cake a week or so ago.....it is soooooooo delicious, yummy and creamy. I could eat it by the spoonfuls!!!! lol And everyone who had the cake (chocolate pound - 4 layers with this between) could not stop complementing me. Had leftovers and it kept very well in the fridge for a few days....that is until I made some thick and soft dark chocolate cookies that I sandwiched with the filling and popped in the freezer for about an hour!!!! Sort of like an ice cream sandwich cookie. Took them out and sat on counter for about 30 minutes.....so so so good!! lol Too bad I could only eat one at a time - they were so rich!!

Thanks to Dawn I have a new favorite filling! Gonna try this in a butter pecan layer cake in a few weeks.
