Need Help For Wedding Cake Filling Request

I'm doing a wedding cake in October and the client requested that the filling on 2 of her tiers be caramel pecan with maybe some chocolate in it as well. I was wondering what I could use for the filling that wouldnt make the cake soggy and isnt perishable. It will need to be able to be at room temperature for atleast 3 days. Any ideas would be greatly appreciated! Thanks guys!

You could do a caramel buttercream with chopped pecans... I would say a caramel ganache (which is one of my favorite bon-bon fillings, but can be adapted for a cake), but that would need to be refrigerated, I'd think.

Chocolate Caramel-Pecan Filling

INGREDIENTS
3 tablespoons unsweetened cocoa or Nesquik
1 tablespoon butter
1 (14 ounce) can sweetened condensed milk
1 tsp vanilla

DIRECTIONS
In a medium saucepan over medium heat, combine cocoa, butter and condensed milk. Cook, stirring, until thickened. Remove from heat, add vanilla and chopped pecans or walnuts.
