I did a wedding cake today. Yesterday I iced and stacked the cakes. The buttercream was wonderful in the beginning - it was smoothing out nicely with viva and a roller icon_smile.gif But then, it seemed to get sticky and would come off on the paper towel. The more I worked with it the worse it became. It was VERY humid in the bakery and I wonder it that was the problem. It was the same way this morning when I did the final fixing before transport icon_mad.gif I used the Sugar Shack recipe and I love that buttercream. Does anyone know what might have been the problem and how I can prepare for a July wedding cake? I thought about just icing and smoothing in the big walk in fridge!

mine does that when it gets hot. I guess the crisco starts to melt and causes a huge mess. When that starts to happen I just let it chill in the fridge and it usually fixes the problem.
