How many days in advance can you make a cake covered in fondant that it would still taste fresh?

A cake covered in fondant can be kept about a week when covered with fondant assuming you filling is not perishable. Fondant seals in the moisture.

At room temp., 2-3 days assuming that the filling is not a custard like or fruit that can go bad ..

yeah i agree about a week, but you have to remember that the fondant will continue to get hard the longer it is out...
