I have just received a request for cake balls that a diabetic would be able to eat. Does anyone make these?

For my regular cakeballs I mix leftover cake scraps with some b/c icing, freeze and dip in chocolate.

Could I use the Pillsbury low-sugar cake mix, diabetic icing, and sugar free chocolate do you think? Would they taste any good?

Hmm, when I saw the title I immediately thought the low-sugar Pillsbury mix and diabetic icing! So I guess you're on the right track.
