My experience goes back to the 1970's & 80's so I'll leave the wrapping/freezing to those whose experience is more updated. Yes, you *can& freeze it ... cheesecake is just as good to eat frozen as thawed! icon_wink.gif I used to cut mine in pieces, wrap & freeze for the family as it was their favorite way to eat cheesecake!

I make sure the cheesecake is well chilled as per usual (typically you need to chill it overnight after it's baked) - I double wrap in saran wrap then put in a freezer bag.

To thaw, I move to the fridge and allow to thaw slowly - again usually overnight.

Comes out perfectly icon_smile.gif

The restaurant that I bake cheesecakes for freezes them already sliced & wrapped individually. They take out a few at a time, straight into the cool case, and serve from there. If anything, it gives them an additional smoothness to the texture, oddly enough.

Luckily it's been working just fine... icon_biggrin.gif
