Help! Baby's First Cake!

Hi I took on making a train themed (shape) cake for a 1 year old's b-day. My problem is baby has never had sugar and the cake needs to be sugarless...no added sugars or sugar substitutes? Any recipe/ideas---applesauce cake is all I can find and it seems so boring? And what frosting would work---baby can have cream cheese but just not granulated types of sugar...natural fruit sugar is okay...Suggestions....another problem will be the consistency to hold the shape of the train?

Can you get ahold of a copy of "What to Expect the First Year"? At the back of the book are severa; recipes including a first birthday cake (I think it's carrot). Their recipes are always very "crunchy-granola" and may be sugar-free.
