Do you still need to use a center dowel if you are putting it together at the venue?

No. Only if you are transporting it together.

If it has many stacked layers or is all covered with fondant, then I would still dowel the center because it could still shift or fall while sitting there. Trust me, I've been there done that! LOL. I had a 6 tier all fondant cake that I set up just before bride arrived and it was all level but before they could cut it, the top 2 layers slid off! Just too tall and heavy! Or better yet use the SPS system that everyone here raves about. I haven't used them but I hear great things!

I agree. 25 years and I've JUST started transporting some of my cakes assembled and that's the only time I use a center dowel.
