I have a wedding on the 31st and we are doing cupcake bouquets as the centerpiece and cake for each table. We are doing 40 tables with 10 cupcakes a piece, so 400 cupcakes. I was wondering if I start tomorrow (13th) and bake as many as I can and do 2 more nights like that the following week if that would be alright. If I bake tomorrow and freeze them will they be okay until the week of the 31st??

I only need to give them overnight to defrost right?

I am planning on wrapping them in saran wrap and then put them in a gallon zip lock bag. That should be fine right?

probably less than overnight. I can thaw whole cake tiers in an hour or so. Cake isn't like hamburger ... it thaws really fast.

If you took them out of the freezer the morning of the wedding they would be thawed out by the time they were eaten at the reception. They thaw very quickly.
