Cheesecake Wedding Cake???

if a wedding cake can be made out of cheese cake, how long is ok for it to sit out???

Ive been told that cheesecake is best served at room temp. but I'm not sure how that would go for food safetly issues.
Good question, anyone know the "hold temp" for cheese cake? I'd liketo know also.

I think it depends really on the type of cheesecake. There are some that they sell in the stores that arent refridgerated at all, like Entemanns. Some specifically say to refridgerate.

If you are making a cheesecake for a wedding cake, I would be careful so no one can blame getting sick on you. Make sure that you give the MotB or the bride specific instructions on refridgeration, and let them know to cut the cake maybe as soon as dinner is over. You could also let the rental hall know, they might just have a walk-in that it can be stored in until right before the reception.
