Do I Need To Dust A Chocolate Mould Before Use?

I recently got a chocolate mould to make a small castle, i washed it, dried it, dried it some more and then i used it. My chocolate stuck to the mould icon_cry.gif My question is..... should i have dusted the mould with anything and if not does anyone please know why my chocolate stuck to the mould.

No, unmolding chocolate is all about good tempering. put your mold in the freezer for a couple of minutes before unmolding.

Polishing the mould inside also helps.

In the future, do not wash your chocolate molds with soap. Just a good hot water rinse.

Definitely pop the mold into the freezer for a few minutes to help with unmolding. Don't leave it in too long, tho, or the chocolate may shatter.

Polishing the mold, as cazsam suggested, may help. Buff with a dry cotton cloth.
