I am doing a red velvet cake for a going away party for a co-worker this Friday. I usually fill my red velvet cake with the ubiquitous cream cheese icing but this time I wanted to do something different. I have been racking my brain trying to come up with a filling that would cooperate with the cake. I thought perhaps cannoli filling or a dark chocolate buttercream. I just don't know what would work best. Any ideas?
Thanks!
Darci
I am using the crusting buttercream recipe that I found here on CakeCentral. It works remarkably well; so much better than the typical Wilton recipe. It's far too runny to ice with.
I think your original idea of a dark chocolate BC would be great, since there is a bit of a chocolate base to red velvet and the BC icing is buttery and light the chocolate seems it would compliment it perfectly.
I am also thinking chocolate of some sort since they say red velvet is a type of chocolate cake sounds tasty thinking of it!
These are the ones I can think of:
Whipped Cream; CHocolate Ganache; Caramel w/ Pecans; White Chocolate ButterCream and plains Raspberries
What about a white chocolate cream cheese filling? I have a white chocolate cream cheese filling with coconuts and walnuts for carrot cakes I use - but I also use it without the coconut and walnuts for my red velvet cake - it's yummy!
All of those sound good, I was also thinking a raspberry or strawberry filling since red velvet is basically somewhat of a chocolate cake.
